
Macaroni with creamy pumpkin sauce is incredibly easy and versatile and I don’t recommend this for you who hate pumpkins.
Heavy rain outside, all over Bali land. I sat in front of my computer, trying hard to get an inspiration for my ongoing novel on Good novel.
While, Tipat – my cat, break my concentration. He sleeps on a small table beside the computer and take all space without feeling guilty.
“C’mon dude, I want to write right now. Move! Give me your space.”
Unfortunately, he just saw me with lazy face. “Don’t bother me Mom, I love this place. We can share the table.” He continues his sleep.
OUF!! Instead, move my cat to my bed. I allowed him to sleep like he wants. Cat lover will understand this .
Then, I continue to write. Sometimes I feel, so hard for myself, every day I push to write for novel or even make content for my blog and You tube channel – Dapur Sukabeda.
I realize, following my passion to achieve my dream job, it is not easy like we say. I have to work hard and consistent to do it. If you are lazy who will accomplish your dream.
Thingking about it make me hungry.
Slowly, I open my fridge. I still have a slice of steam pumpkin. I remember, when I cooked rice this morning, I put the pumpkin on top of the rice to steam, and no one like it, except me, of course.
My daughter never interested to try, she doesn’t like the texture while my husband doesn’t like the taste.
For as long as I can remember my childhood, my mom makes sayur lodeh labu with coconut milk and add tempe, and fried tofu. Sometimes she makes kolak labu. Next I will make it.
At my mother in law house, the pumpkins grew wild accidentally on their back yard. The last time when they harvest it, I got one big pumpkin.
Pumpkin has impresive health benefit, rich in vitamin A, high antioksidan, and boost immunity
As I want to eat creamy dish, I will make macaroni with creamy pumpkin sauce.
This menu for one person.
Ingredients:
Half cup macaroni,
Half slice steam pumpkin.
2 garlic, chop
1 slice ginger
1 tbsp vegetable oil.
Step one
Boil macaroni for 7 minutes or till al dente. Strain and set aside the water.
Step two
Blend the steam pumpkin, add water if need.
Step 3
Heat the wok, add vegetable oil and garlic, cook till fragrant.
Step 4
Add pumpkin sauce with macaroni water. Then macaroni. Mix well.
Step 5.
Add salt and pepper. Taste. Cook around 4 – 5 minutes.
This pumpkin sauce without cream, the taste surprisingly delicious. The sauce goes well with macaroni and I love this simple, healthy recipe. Try it and give me a comment if you like it.
